Pancake day with Recipe

It's pancake day and it may be a little late to share the recipe but its for me as well as for others haha. This year has been a complete success from the pancake aspect of life, if there is such a thing, but I have actually managed to make homemade batter and flip two pancakes all on pancake day, win for me.  To go with this success I wanted to share the recipe that I used today and the method for making them too. I still can't fully believe that it has taken me so long just to make my own instead of buying those silly bottles. Recipe 150g of  Plain flour 2 medium eggs 300ml of milk Oil (for cooking) Method 1. Sieve the plain flour into a bowl and make a well in the centre. 2. Crack both eggs into the well and slowly whisk, drawing the flour from the edges in. 3. Homemade mincemeat • Recipe and Method

I know that it is still only October BUT this takes a while to rest and you can't be too prepared for Christmas. This is a simple mincemeat recipe that has been passed down to me and I wanted to share it to you all. The recipe should make about 5-6kg's of mincemeat which can last a few years in jars, it only gets better with age. Recipe 2kgs of Apples 1kg of Currents 750g of Sultanas 750g of Suet 750g of Caster Sugar Rind and Juice of a Lemon 2 tsps of Mixed Spice 2 tsps of Nutmeg Approx 150ml of either Rum, Sherry or Brandy Method 1. Peel, core and slice all the apples. 2. Mince the apples with the sultanas (meat mincers work fine). 3. Add all the other ingredients and mix together well.  4. Separate into jars and lid them (sticker year onto them) 5. Leave at least 3 weeks to stand before using. It is that simple. Please let me know if you use this recipe, I would love to know.

Cheese Scones • Recipe and method

Another day and another yummy recipe to share with you. I have loved cheese scones since I was little but never actually tried making them before. I found a very simple recipe and tried it out with Lilly. She loved getting messy and we both enjoyed eating them. Firstly preheat your oven to 220°c / gas mark 7 Recipe: 225g Plain flour 2 1/2 Tsp Baking powder 1 pinch of salt 1 pinch of pepper 50g butter (cubed) 125g Cheddar cheese 140ml Milk Extra milk to glaze Method: 1. Place your flour into a mixing bowl and add the baking powder, salt and pepper. 2. Rub your butter into the flour mix until it resembles breadcrumbs. 3. Add your grated cheese and mix into well. 4. Pour in the milk and mix until it creates a dough consistancy. 5. Place the dough onto a floured surface and roll to about 1cm thick. 6. Cut out circular shapes and place on a greased baking tray. 7. Simple Chocolate cake • Recipe and Method

Recently we made a really simple chocolate cake and wanted to share the recipe with you. This recipe has such a small amount of ingredients and is so easy to make but tastes amazing too. Recipe - 50g Dark Chocolate - 50g Butter - 30g Plain Flour - 1tsp Cocoa Powder - 60g Caster Sugar 1 egg Method 1. Preheat your oven to 180°c/ gas mark 5 2. Break chocolate into a glass bowl with butter and place over a boiling saucepan of water to melt. 3. Stir well, remove from heat and leave to cool.  4. Break your egg into a bowl with the sugar and whisk until light and creamy. 5. Slowly add the chocolate to the egg mix and stir well. 6. Sieve in the flour and cocoa and fold in. 7. Put the mixture into a greased shallow cake tin and bake for 25 minutes. This is so easy and a great recipe for a quick and tasty cake, especially to make with your children. xXx

Blogmas day 16 • Homemade hot chocolate cones

For blogmas day 16 I thought I'd share a way of saving some money and doing your own.  I have been contemplating buying some of these hot chocolate cones for Lillys Christmas eve basket but people are charging up to £2.50 per cone. I thought about checking the price on the cones on eBay and to my surprise they were only 99p for 10 cone bags. The cone pictured below is 3 scoops of hot chocolate and some marshmallows for the pefect cup on Christmas eve. It took me not even a minute to fill and tie it up and is ridiculously easy to do at home rather than paying way above the odds for it. I hope you like this simple idea for a cute little stocking filler or Christmas eve box. Happy blogmas xXx

Blogmas day 2 • Christmas cake • Recipe and Method

Blogmas day two is a Christmas Cake recipe for you. I make my cake in November to make sure I have time to feed it, but you can just soak the fruit and leave a week before icing the cake. I made a 7 inch square cake to cut in half. and here is the recipe for you all. - 965g Mixed fruit - 50g Ground almonds - 100g Glace cherries - 200g Plain flour - 1tsp Mixed spice - 200g Butter - 200g Brown Sugar - 1 Lemon rind and zest - 4 standard eggs - 100ml rum/brandy/sherry Method - Preheat oven to 200oc/ gas mark 6 - Line sides and bottom of cake tin with double parchment paper - Cream butter and sugar until fluffy - Beat in eggs one at a time, if starts to curdle add a little flour - Add rind and juice of the lemon - Mix flour, ground almonds and spice together - Toss mixed fruit and cherries into flour - Add fruit and flour to other ingredients a little at a time, add half the rum ( or soak the fruit in alcohol overnight) Save some ...
